This is a cake recipe I used to make occasionally for an after-school snack when our kids were young.

I almost forgot about it, and then found it in some recipes I was looking through for column ideas. When I was putting it together, I got all nostalgic and really missed those years when I was a young mother.

You can also add nuts and raisins to the batter, if you wish. I would serve a piece of this cake with a tall glass of milk. It makes for perfect comfort food in the middle of winter.

Apple Snack Cake

1 egg
3 tablespoons milk
1/2 cup mayonnaise
1/2 cup sugar
1/2 cup brown sugar
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
2 cups peeled chopped apples
Cream Cheese Frosting (recipe follows)

Preheat oven to 350 degrees.

Grease and flour an 8-by-8-inch square baking pan.

In a large bowl, beat together the egg, milk and mayonnaise.

Beat in the sugar and brown sugar until smooth.

Sift together the flour, baking soda, salt, cinnamon, nutmeg and ground cloves.

Add the dry ingredients and beat until well combined.

Fold in the chopped apples.

Pour batter into prepared baking pan.

Bake for 40 to 45 minutes or until tester comes out clean.

Cool cake and frost with Cream Cheese Frosting.

Cream Cheese Frosting

2 ounces cream cheese
1/4 cup butter, softened
1 teaspoon vanilla
1 cup powdered sugar
2 tablespoons milk

In a bowl, beat together the cream cheese and butter until smooth and creamy.

Add the vanilla and powdered sugar with the milk until you have a smooth frosting.

Frost the cooled apple cake.
