Strawberry Mango Cheesecake winner in cookie contest

Strawberry Mango Cheesecake walked away with the titles of people's choice winner and judges' choice winner during the 2013 Girl Scout Cookie Cook-Off.

The event, held Jan. 26 in the Fox River Mall in Grand Chute, featured dishes made by local restaurants using Girl Scout cookies. The winning recipe was from Remington's Steaks and Seafood in Neenah.

Ingredients:

1 box Mango Cremes Girl Scout cookies
pound butter plus cup
2 pounds cream cheese
pound sugar
6 eggs
teaspoon each vanilla and lemon juice
1 ounce sour cream
1 ounce heavy cream
1 cup each diced mango and chopped strawberries

1. Preheat oven to 350 degrees. Chop cookies in a food processor until ground. Add cup butter. Press into bottom of cheesecake pan until firmly packed.

2. Mix remaining butter, cream cheese and sugar until smooth. Slowly add eggs and mix until incorporated. Add remaining ingredients and mix until smooth.

3. Pour batter into pan and place on a sheet pan. Add water bath. Bake 2 hours or until firm. Cool 1 hour and freeze for at least 24 hours. When ready to serve, remove from freezer, let rest 10 minutes and then cut.
