Green Bay school lunch lines offer some new options such as wheat-free penne pasta with marina sauce and chicken over wild rice for an increasing number of students who avoid gluten.

It's a protein found in grains such as wheat, barley, rye and triticale, a cross between wheat and rye, that causes inflammation in the small intestines of people with celiac disease. Others are sensitive to the protein. Gluten-free diets help control those conditions, according to the Mayo Clinic.
