Cheese Recipe Day 11: Cheesy Cabbage Casserole

Cabbage combined with bacon, horseradish and cold pack cheese makes for a hearty casserole.

Cheesy Cabbage Casserole

Servings: 8

1/2 a medium-sized head of cabbage (about 3/4 pound), cored and thinly sliced
4 slices (4 ounces) bacon
2 tablespoons shallots, minced
8 tablespoons butter, divided
1/3 cup flour
8 ounces Wisconsin Horseradish Cold Pack
2 tablespoons prepared horseradish
Salt and pepper to taste
1/4 cup bread crumbs

Preheat oven to 350°F. Place cabbage in boiling salted water; parboil for 5 minutes. Allow to stand in hot water for several minutes. Drain and place in a large bowl.

In a non-stick skillet, over medium heat, fry bacon. Remove to paper towels, cool, crumble; set aside. Add shallots to bacon fat and sauté over medium heat. Add 6 tablespoons butter, melt and stir in flour until smooth. Gradually add milk, stirring constantly. Continue cooking and stirring until thickened and bubbly. Stir in cold pack and horseradish until smooth. Season with salt and pepper.

Pour sauce over cabbage, add half of bacon crumbles; mix well. Pour into in buttered 1 1/2-quart casserole. Sprinkle with breadcrumbs; dot with remaining butter and bake for 20 to 30 minutes, or until hot.
