The Kitchens of Kohler Chefs of The American Club resort, the only Forbes Five-Star hotel in Wisconsin, and the Forbes Four-Star Immigrant Restaurant, will share monthly tips, tricks and recipes.

This month, Kohler Original Recipe Chocolates Chocolatier Anette Righi DeFendi shares ideas about how to enjoy a sweet summer by incorporating chocolate into seasonal pastimes.

Chocolatier Righi DeFendi features a recipe for a Kohler Original Recipe Chocolates Trail Mix Cookie. The cookie makes for a delicious treat during a summer BBQ or picnic.

The Kohler chocolatiers have spent the beginning of their summer finalizing the new Platinum line of Kohler Original Recipe Chocolates. This beautifully-crafted piece of edible artwork is the first dual-layered filled-shell chocolate making a debut at this year's Fancy Food Show in New York City. The Platinum is filled with one layer of brown sugar caramel and a second layer of pecan praline, wrapped in a 63 percent dark chocolate shell. Platinum joins an already lauded line of Kohler Original Recipe Chocolates that include a variety of tasty morsels including Rare Facets, Garden Ganache, Chocolate Bars and Terrapins, the first signature Kohler Original Recipe Chocolate line.

Trail Mix Cookies


2 sticks (16 tablespoons) unsalted butter, softened
¾ cup plus 1 teaspoon granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
2 cups rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 pound Kohler Original Recipe Chocolates Trail Mix
1 ¼ cups sweetened coconut


Preheat oven to 350-degrees.

In a large mixing bowl or standing mixer cream butter and sugars together until combined.

Add eggs one at a time. Add vanilla.

In a separate bowl combine flour, rolled oats, baking soda, baking powder and salt.

Blend dry ingredients into cream mixture until incorporated.

Stir in Kohler Original Recipe Chocolates Trail Mix and coconut.

With an ice cream scoop, scoop batter onto a baking sheet lined with a silicone mat.

Bake for 12 to 14 minutes.

Yield depends on the size of the cookie.
