I can't think of too many events in life as stressful and exhausting as moving, especially downsizing. I had more than nine years to sort through "keepsake" bins and boxes, but I plowed through the stuff only days before the closing.

Luckily, our daughter's house has a big attic.

I have been moving stuff since I left for my freshman year at college, so I should be an expert by now. Organizational skills I do have. Learning to throw away stuff is my downfall, especially my favorite magazines.

We will be living with boxes and unpacking for weeks because I refuse to miss a day of summer. I know where my toothbrush and my make-up bag are, so I am all set.

Oh, and the kitchen is workable so we can cook and eat.

Here's a tasty recipe for the summer months.

Hot and Spicy Shrimp Kabobs

12 extra large shrimp
1/2 cup olive oil
4 cloves garlic, chopped
2 tablespoons Cajun seasoning
1/2 lemon, juiced
3 tablespoons Italian parsley, minced
2 tablespoons brown sugar
1 tablespoon soy sauce

Clean and prepare shrimp and place in a large bowl.

In another bowl, mix together the olive oil, garlic, Cajun seasoning, lemon juice, parsley, brown sugar and soy sauce.

Pour marinade over shrimp.

Cover bowl and refrigerate for a few hours.

Put marinated shrimp on skewers and barbeque until shrimp is done.

Serve with Lemon Linguini.

Lemon Linguini

1 pound linguini
1/2 cup olive oil
1 lemon, zest and juice
1/2 cup scallions, chopped
1/2 cup Italian parsley, chopped
Salt/pepper to taste

Cook linguini according to package directions and drain.

In a bowl, combine the olive oil, zest and juice of the lemon, scallions and parsley.

Toss in the cooked and drained linguini.

Salt and pepper to taste.
