For the 1960s, I'm going to pick two years, 1962 and 1968, and see what changes occur. I am using the telephone directories for these years as references.
The Airway Bar is still there in 1962 but, while it is still in business, it is missing from the 1968 directory.
Bey's Bar is at 305 N. Central for both years as is Biechler's at 1708 N. Central. Buzz's is at 801 S. Central, the Cameron Club at 10/13, Central Tavern at 401 S. Central, Del's Bar at 504 E. Fourth, the Derby Bar at 511 S. Central, Dick's Bar at 120 W. Second, Edgetown Tavern at 1214 E. Fourth, Jolly Corner at 201 N. Central, Julies Tavern and Supper Club at 501 S. Central, Minnie and Swick's at 500 N. Central, Palm Gardens at 107 E. Second in 1962 is at 100 S. Chestnut in 1968. The Spot Bar is at 409 S. Central, the 10-13 Club is at 10/13 or Klondike Corners, and the Uptown Bar is at 107 S. Central.
Don's Bar at 106 S. Chestnut is the Short Branch by 1968. The Downtowner Supper Club at 731 S. Central is not in the 1968 directory nor is the El Sombrero at 160 S. Central in the Hotel Charles building.
Floyd's Bar at 600 W. Blodgett has become De Jarlais' Bar by 1968. Fred's Old Time Tavern at 101 N. Central is Al's Old Time Tavern in 1968.
Jim's Union Bar at 113 W. Depot St. is the Union Bar in 1968. Ed Kuehl's Tavern at 317 N. Central has become Pete's Bar, and Les's Bar at 454 S. Central is now Bill's Labor Bar in 1968.
Marge's at 147 S. Central in 1962 is not in the 1968 phone directory. Nig's Bar at 136 S. Central also is missing. The Northside Bar at 301 N. Central in 1962 has become Max Roggenbauer's by 1968.
Rod's Bar at 141 S. Central has become Miller's Bar by 1968, and the Round Up Bar at 102 S. Central in 1962 doesn't show up in 1968.
Walter Schirpke's Bar at 1212 S. Central is just Wally's Bar in 1968. Rebsteck's Tavern at 400 N. Central is in the 1968 directory but not the 1962.
This puts our counts, based upon the telephone directories, at a conservative 32 in 1962-1963 and 27 in 1968.
It is possible that the bars did not have telephones or were unlisted numbers - VERY unlikely - or were just missed or omitted in the compilation of the directories.
