Packers fans are used to seeing pigskins flying around Lambeau Field in Green Bay every fall. Now they have the opportunity to have pork bellies, too.
Cudahy-based Patrick Cudahy said Thursday it has opened the Patrick Cudahy Pack House food stand at Lambeau Field in Green Bay.
"The Pack House features delicious new bacon-centric recipes created for football fans with a variety of all natural, sweet apple-wood smoked bacon products," Patrick Cudahy said in a statement.
The Pack House will be open on game days at Lambeau Field outside section 124 in the lower concourse.
Among the menu items are “The Pig Skin,” a baked potato wrapped in bacon and covered in chili, cheddar cheese, sour cream and chives. The menus also includes bacon-crusted cheese curds and a bacon burger that features a bacon bun, bacon-stuffed burger and bacon cheese spread, topped with -- what else -- bacon.
“We are Wisconsin proud for more than 125 years and extremely proud to bring the Patrick Cudahy Pack House to Lambeau Field,” Bud Matthews, senior vice president at Patrick Cudahy, said in the statement. “Packers fans are going to love the creations with our signature sweet apple-wood smoked flavor.”
That a bacon-themed concession stand would pop up at Lambeau Field isn't a surprise to Jeff Sindelar, an extension meat specialist at the University of Wisconsin-Madison and UW Meat Laboratory.
Bacon's resurgent popularity of recent years continues unabated, Sindelar said.
"The 'bacon rage' continues to be stronger than ever," said Sindelar, who in addition to having a doctorate in meat science has also been trained as a certified barbecue contest judge. "I continue to see new (bacon) products and creations made available for consumers. Meat processors still can’t keep up with the demand for bacon."
Patrick Cudahy, a division of Smithfield Foods, was founded more than 125 years ago in Cudahy, the Milwaukee suburb that bears its founder's name. The sprawling Patrick Cudahy facilities employ about 1,000 people. The company's products include fully cooked and traditional bacon, bacon pieces and toppings, dry sausage, pepperoni, ham, deli and sliced meats.
Smithfield Foods is the world’s largest pork processor and hog producer.
